Does anyone have, or know of, a library for displaying math symbols,
equations, etc using SDL? Alternatively, is there a library for importing and
displaying PDF files?
I’d like to create a program for algebra students to test their problem
solving skills, and such libraries could save much time not having to
reinvent the wheel.

poppler would be the perfect match for PDF rendering:
http://poppler.freedesktop.org.
